Founded in 2005 by tech executive Dominique Cor and Burgundy native François de Nicolaÿ (of Chandon de Briailles), Domaine des Moriers crafts pure, terroir-driven Cru Beaujolais grounded in decades of organic and biodynamic stewardship. Starting in Moulin-à-Vent before expanding to a winery in Lancié, the estate relies on meticulous, non-interventionist farming—utilizing manual labor, horse-plowed soils, and organic practices certified by Ecocert in 2023. Today, the winery is managed by François’s daughter, Pauline de Nicolaÿ, who brings extensive experience from premier biodynamic estates across Burgundy and the Jura. In the cellar, natural whole-cluster fermentations in cement, traditional vertical pressing, and aging in neutral oak and stainless steel proceed without added sulfites, commercial yeasts, or chaptalization, yielding authentic, long-lived expressions of the region.
