Weingut Grassl, led by Philipp Grassl since 2006, has emerged as one of Carnuntum’s most serious and expressive red-wine producers, guided by the simple credo “Let the vineyard speak.” Rooted in a family history stretching back to the 18th century, the estate found its modern identity after Philipp’s formative experiences in Sonoma and amid Austria’s post-scandal quality renaissance, embracing terroir-driven, low-intervention winemaking. Farming 27 hectares around Göttelsbrunn in eastern Austria, the Grassls focus on Zweigelt, Blaufränkisch, and St. Laurent grown on a complex mosaic of loess, clay, gravel, and limestone under a moderate continental climate shaped by the Danube and Pannonian winds. Certified organic since 2015 and increasingly biodynamic in practice, the vineyards are dry-farmed, hand-harvested, and worked with cover crops to express site diversity. In the cellar, Philipp applies minimal intervention—spontaneous fermentations, no additives or fining, restrained sulfur, and élevage in a range of vessels—resulting in energetic, pure-fruited wines that reflect both the region’s ancient history and its modern optimism.
