Eschewing chemical fertilizers and heavy-handed techniques, they favor traditional methods, rigorous fruit selection, spontaneous fermentations, long macerations for reds, and extended aging on fine lees—often for 20 months—in neutral wood, with no filtration for top wines. The result is a lineup of “muscular” yet balanced wines—more like decathletes than sumo wrestlers—defined by elegance, strength, and individuality.
