Yannick Pelletier has farmed his 10-hectare, certified-organic estate in the Saint-Chinian AOC since 2004, working with widely dispersed parcels that span a diverse mix of schist, clay-limestone, and round-stone soils and are planted mainly to Grenache, Cinsault, Carignan, Syrah, and Mourvèdre, alongside recently acquired old-vine Terret Blanc and Terret Gris. The vineyards, ranging from 15 to 70 years of age, are largely trained in gobelet, with Syrah in Cordon de Royat, and are cultivated with minimal mechanization, organic compost, limited plowing, and extensive manual labor to protect soil health and ensure precision. Pelletier emphasizes careful spring debudding to regulate yields and promote airflow, uses only non-penetrating copper and sulfur treatments, and adheres to a minimalist cellar philosophy centered on gravity, indigenous yeasts, and rigorous manual sorting. His wines are made, aged, and bottled without added sulfites, fining, or filtration, reflecting his belief that clean, healthy grapes need no corrective interventions and should express their terroir with complete integrity.
