DNS Wines
The name came from a Burgundian cellar, where a winemaker declared the wine in their glasses a "Do Not Spit" wine — too good to waste. Todd Mathis and Dionysi Grevenitis formed the company in 2013, bringing nearly three decades of experience with Burgundy, the Rhône, the Loire and Champagne. The book has since grown to include benchmark names from Greece, Italy and Austria, every grower farming sustainably or organically and working without intervention in the cellar.
